Slice eggplant thinly, spread each slice with mayonnaise. Oriental Eggplant is very good to use in this recipe slicing it longwise.
Coat each side with Parmesan cheese. Arrange the slices on a non-stick or slightly oiled cookie sheet. Broil on each side until golden brown and crunchy on the outside (2-3 minutes).
