Heat butter in skillet, add onion and sauté until nearly tender. Add garlic and continue to cook until onion is translucent. Add potatoes and 2 cups stock, cover and simmer until the potatoes start to soften around the edges. Wash kale, chop. When the potatoes are very tender, puree half of them with remaining stock, salt and pepper. Add kale and cook until the kale is soft.
For an interesting soup, use white, red and yellow potatoes. Reserve cooked slices of the three potatoes to add at the end of the cooking time.
