Soak beans overnight or heat in 4 cups water, cover and boil 2 minutes. Turn off heat and let stand for one hour. Drain beans.
Add all ingredients to beans except salt, pepper, wine vinegar / lime. Cover and simmer for two hours or until beans are tender.
Add salt, pepper,red wine vinegar/lime juice to taste. Bring to a simmer, heat through and let stand.
Tasty additions include a dollop of sour cream, cilantro, avacado, tortillo strips to the soup before serving. Try with a swirl of Stony Brook Butternut Seed Oil. Delicious.
