Whole Wheat Pasta with Cabbage and Sardines

Ingredients

3 cloves garlic, smashed, peeled and minced

¼ cup olive oil, divided
Red pepper flakes (optional)
1 4oz can sardines in olive oil
½ cup breadcrumbs
1 large onion, sliced thin
½ head Napa cabbage, sliced thin, washed and drained
1-pound whole-wheat pasta
½ bunch fresh basil, sliced thin
Juice and zest of ½ lemon
Grated Pecorino or Parmesan cheese
Salt and freshly ground black pepper to taste

Directions

Sauté the garlic in half of the olive oil until soft and fragrant, sprinkle with red pepper flakes (optional) and cook for another minute.
Add sardines with oil, mashing until dissolved. Sprinkle with breadcrumbs and cook until toasted. Remove from heat and set aside.
Sauté onions in the remaining olive oil over low heat in a large sauté pan until soft and beginning to brown. 
Turn the heat up to medium high and add the cabbage, a handful at a time and continue cooking until soft and caramelized. 
Cook pasta according to package directions while the cabbage caramelizes.
Drain pasta and add to cabbage mixture, toss lightly with fresh basil, lemon juice, lemon zest and breadcrumbs. Adjust seasoning. Sprinkle with cheese and serve with extra cheese on the side.
