Sautéed Purslane with Garlic and Onions
Sautéed Purslane with Garlic and Onions Serves:   4
(serving size: 1/4 cup)

  • Prep Time:   10 minutes
  • Cook Time:   10 minutes
  • Total Time:   20 minutes


Purslane, 1 bunch, very well cleaned and drained
2 Tbs olive oil
1 small onion, peeled and diced
- garlic cloves, peeled and minced
salt & pepper


Cut cleaned purslane into small bite size pieces.  In a large frying pan, add oil and heat to medium high.  Sauté onion, add garlic and continue 30 seconds more.  Add the greens and sauté about eight to ten minutes, or until tender.  Lower heat and allow any accumulated liquid to evaporate, about five minutes.  Add salt & pepper to taste.
