Upside Down Cake

Ingredients

Pears-2 peeled, cored and sliced

3 tbs. Butter
1/2 cup Light Brown Sugar, packed
1/2 cup unsalted Butter at room temperature
3/4 cup Granulated Sugar
1 tsp Vanilla
1/4 tsp Almond Extract
3 Eggs at room temperature
1 2/3 cup Flour
1 tsp Baking Powder
1/4 tsp Salt

Directions

Preheat the oven to 375*. Heat the 3 tbs. butter with the brown sugar in a 10 inch cast iron skillet over medium heat. Stir until the sugar is melted and smooth. Remove from the heat. Set the pear slices in a circular pattern around the outside of the pan. Fill in the center with the remaining slices.

Cream the butter and sugar until light and fluffy, then add the vanilla and almond extracts. Beat in the eggs one at a time until smooth. Stir in the remaining ingredients. Spoon the batter over the fruit and smooth out.

Bake in the center of the oven until the cake is golden brown, 35-40 minutes. Let cool in the skillet for a few minutes. Place a cake pan on top of the skillet and turn the skillet over, grasping the plate and skillet tightly. Carefully remove the skillet. If there are any pieces that stick to the skillet, pry them off and place them on the cake.

You can use Pears, Apples, Peaches, almost any fruit that you can slice and arrange around the cake.
