Zucchini Rice

Serves:   4
(serving size: 1 cup)

  • Prep Time:   10 minutes
  • Cook Time:   45 minutes
  • Total Time:   55 minutes

Ingredients

1 1/2 cups brown rice (uncooked)

2 large zucchini, shredded
3 ears corn, steamed and cut from cobs
1 15-oz can black beans, drained
2 TB unsalted butter
Juice of 1 lime
1/4 cup chopped fresh cilantro
Kosher salt and fresh ground black pepper

Directions

Prepare rice.

Remove from heat and stir in butter, zucchini, corn, beans, lime juice and cilantro.  Let sit for 5 minutes.  Season with salt and pepper.
