- Summer Squash and Zucchini

2 Cups Zucchini Shredded
Preheat oven 325*. Mix dry ingredients together and set aside.
Mix sugar, oil, eggs and vanilla. Combine with dry ingredients, don't over mix. Fold in shredded Zucchini, walnuts and raisins.
Grease 2 loaf pans generously, or 4 small loaf pans, 4'1/2 x 2. Divide equally into pans. Bake; larger pans ~1hr, smaller pans ~40 minutes. Let cool, and ENJOY!
