Winter Squash Bread

Ingredients

2 eggs

1/2 cup sugar
1/2 cup canola oil
1 tsp. vanilla
1/2 tsp. salt
1 cup cooked, mashed Winter Squash or Pumpkin
1 tsp. baking soda
1/4 tsp. baking powder
1/3 cup warm water
1/2 tsp. each cinnamon, cloves, nutmeg
1 3/4 cup flour
optional 1/2 cup raisins, 1/2 cup walnuts or other nuts

Directions

Our neighbor Mrs. Edith Stevens gave me this recipe years ago. She is in her 90’s and still making bread. It is my favorite. You can use any kind of Winter Squash or Pumpkin. 

The only direction was the list above and then Bake 350 degrees for 1 hour or until done. 

I mix the eggs, sugar, canola oil and vanilla in a bowl. Mix the Winter Squash, salt, baking soda, baking powder and warm water. Add and mix in the flour and spices. If you reserve a little of the flour and coat the raisins before you add them they tend not to sink to the bottom or just mix them all in and hope for the best.

The recipe can easily be doubled because it seems most Winter Squash will yield 2 cups cooked, mashed solids.
