Summer Salad

Ingredients
For the Vinaigrette:
3/4 cup Extra-Virgin Olive Oil
1/4 cup White Wine Vinegar
1 Large Shallot, Minced
Salt and Pepper to taste
For the Salad:
Mixed salad greens of choice!
2 Tbsp Fresh Lemon Juice
3 Avocados, pitted, peeled, cut into 1/4” slices
3 Tomatoes, cut into 1/4” slices
1/2 Red Onion, Thinly Sliced
1/2 cup Fresh Basil, Thinly Sliced
4 oz. Feta Cheese, Crumbled
Directions
Toss avocados in lemon juice. Layer ingredients in order in a large dish. Pour vinaigrette over the layers, cover and chill 2-3 hours.
Serve the marinated vegetables and vinaigrette by spooning over mixed salad greens; serve immediately.
