Spinach Pesto

(serving size: 1/8 cup)

1 cup Fresh Spinach, packed

1/2 cup Basil Leaves, packed or fresh Parsley
1/4 cup Olive Oil
2 Tbsp Pine Nuts, toasted
2 Tbsp Fresh Lemon Juice
1 Tbsp Lemon Zest, chopped
1 Clove Garlic
1 Tsp Salt
1/2 Tsp sugar
1/4 Tsp Red Pepper Flakes


Process all pesto ingredients in a food processor until paste-like.

*Serve with pasta, or as a spread
