Raw Beet Salad

Serves:   6
(serving size: 1/2 cup)

  • Prep Time:   30 minutes
  • Cook Time:   13 minutes
  • Total Time:   43 minutes


1 pounds beets, peeled and grated

1 minced shallot
2 teaspoons Dijon mustard
1/4 cup sour cream
lemon juice to taste
chopped dill to taste
1/2 head cabbage, shredded
1 hard boiled egg, chopped
parsley for garnish


Here's a recipe for a salad made with raw beets.

Make the dressing, using everything except the beets, cabbage, egg and parsley. Mix the beets, cabbage and egg. Toss with the dressing. Garnish with parsley.
