Coming from Turkey where we have myriad kinds of vegetables, I was so happy to get purslane. In Turkey, we use purslane to make salad either with fresh tomatoes, garlic, olive oil and vinegar OR we mix the purslane (without the stems) with garlic, yogurt and salt. Both are delicious and refreshing during hot summer days.
