Peach Cobbler

  • Total Time:   55 minutes

Ingredients

1 1/2 TBS cornstarch

1/3 cup brown sugar, firmly packed
1/2 cup water
4 cups sliced peaches
1 TBS butter
1 TBS lemon juice
1/2 cup sifted flour
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp salt
2 TBS soft butter
1 slightly beaten egg

Directions

Mix cornstarch, brown sugar and water.  Add peaches and cook until the mixture is thickened, about 10 minutes.  Watch that the peach mixture does not stick and burn.   Add butter and lemon juice.  Pour into an 8” baking dish.

 In a separate bowl combine the sifted flour, sugar, baking powder and salt.  Add soft butter and slightly beaten egg.  Beat with a spoon until the batter is smooth.  ( I usually double this part of the recipe because the topping is so delicious)

 Drop spoonfuls of the batter over the hot peach mixture.  Sprinkle with white sugar if you would like.  Bake in hot oven 400 degrees 40 to 50 minutes.  Serve warm.
