Greek Style Pasta with Leeks

Serves:   4
(serving size: 1 cup)

  • Cook Time:   30 minutes
  • Total Time:   40 minutes

Ingredients

12 ounces Uncooked Pasta (any shape)

5 Cloves Garlic, minced
2 large Leeks, trimmed and thinly sliced
2 tsp Chopped Fennel
1 tbsp Olive Oil
3 cups Chopped Tomatoes
½ cup Kalamata Olives (any olive you like!)
1 tsp Oregano
Salt and Pepper to taste
2 ounces Feta Cheese, crumbled

Directions

Cook pasta and set aside. Sauté garlic, leeks and fennel in oil in a large skillet until the leeks are soft. (15-20 min) Stir in tomatoes, olives, oregano and salt. Simmer uncovered until sauce is reduced, 15 min. Remove from heat; add black pepper and feta cheese. Combine sauce with pasta and serve.
