Eggplant Jumbot

Serves:   6
(serving size: 1/4 cup)

  • Prep Time:   10 minutes
  • Cook Time:   10 minutes
  • Total Time:   20 minutes


Olive Oil

2 Onions, sliced
1-2 Cloves Garlic
1 Eggplant, diced
1 Squash, diced
2 Whole Tomatoes, chopped
Fresh Parsley, chopped
Fresh Oregano, chopped


Saute the onions and garlic in olive oil. Add the diced  eggplant and squash to the pan and saute until tender. Add the tomatoes and herbs. Simmer until all of the ingredients are tender.

Great  on crusty bread or pasta.
