Black Bean Soup

Serves:   4
(serving size: 2 cups)

  • Prep Time:   10 minutes
  • Cook Time:   4 hours or overnight
  • Total Time:   4 hours or overnight


2 cups Black Turtle Beans
4 cups Chicken Broth
4 cups Water
1 Bell Pepper medium-sized, chopped
1 Onion medium-sized, chopped
3 Garlic cloves, pressed
3 tsp Cumin
2 tsp Paprika
1/4 tsp Chili Pepper
2 Bay Leaves
1 pinch Salt and Pepper (to taste)
1 Tbsp Red Wine Vinegar or the Juice of 1 Lime


Soak beans overnight or heat in 4 cups water, cover and boil 2 minutes. Turn off heat and let stand for one hour. Drain beans.

    Add all ingredients to beans except salt, pepper, wine vinegar / lime. Cover and simmer for two hours or until beans are tender.

    Add  salt, pepper,red wine vinegar/lime juice to taste. Bring to a simmer, heat through and let stand.

Tasty additions include a dollop of sour cream, cilantro, avacado, tortillo strips to the soup before serving.  Try with a swirl of Stony Brook Butternut Seed Oil.  Delicious.
