Winter Squash Soup

4 TBS Butter

2 C Onions

4 tsp Curry

2 Medium or 1 Large Winter Squash, skinned and cubed, seeds removed

2 Apples, skinned, cubed, seeds removed

3 C Chicken Stock

1 C Cider

Salt and Pepper to taste


Melt the butter and add onions and curry.  Sauté until soft.  Add Squash cubes, Apple cubes, Chicken stock, Cider and simmer 25 minuted or until tender.  Blend in small batches to make a smooth, creamy soup.  Season to taste.
